Secret Recipes L'Dat!

Growing up with a mama with mad cooking skillz (and no written recipes), I was never really exposed to recipes and the art of putting them together. Now that I'm a bit older, I have a strange desire to be like Mike her and learn how to cook with my eyes closed.
But since I gotsta start somewhere, I've been going with tried and true recipes and then adding my own little touches to them. I think I've done a-ight with my own takes on Jambalaya, Furikake Salmon and my famous (in my own mind) homemade poke...
... but I'm still in my cooking infancy. Let's use this forum to share some of our favorite recipes with each other so we can all become better cooks together... or at least try! Hehe!
So we got the well-known, local miso chicken marinade recipe right? (1 cup miso, 1 cup shoyu, 1 cup sugar, 1 cup beer!). That's always an easy/quick one.
And then we got the secret ones: Aunty Eunice's Broccoli Salad, Johnny Mac's Sriracha Flap Meat Marinade, RRRRich B's wifey's Peanut Butter Brownies, and Mama's Recipe for a Happy Marriage... (Sorry, even if I may know some of them, I've been sworn to secrecy and will get murdered if I divulge anything, so please don't make me tell you. LOL!)
But here's one that turned out to be a pleasant surprise. We actually found this one on the back of a Chex cereal box and decided to try it. BRAH! Broke da mout'! Fo' real! She go! No joke! (And I'm not really a sweets person...)
Chex Muddy Buddies
Prep Time:15 min
Start to Finish:15 min
Makes:18 servings (1/2 cup each)
Ingredients:
9 cups Rice Chex®, Corn Chex® or Chocolate Chex® cereal (or combination)
1 cup semisweet chocolate chips
1/2 cup peanut butter
1/4 cup butter or margarine
1 teaspoon vanilla
1 1/2 cups powdered sugar
Preparation Directions:
- Into large bowl, measure cereal; set aside.
- In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
- Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.
Substitution: Peanut butter and chocolate are a favorite flavor combo, but peanut butter lovers can substitute peanut butter chips for the chocolate chips to intensify that flavor.

my secret recipe just go to my mother in laws for dessert..then jump to my sister in laws for dinner ( SHE IS GREAT COOK ) ...then go to my moms for more food..then when it is my turn to do the cooking I ORDER OUR FOOD....funny.....

OKAY I TELL YOU MY SECRET..I OPEN THE FRIDGE I MIX AND MATCH THEN DINNER IS SERVE....then I teach my boys to cook on thier own whatever they want no recipe....they survive..funny!

if a kid wants cheese sandwhich I found easy way to do it...stick the two bread in the toaster then peel the cheese thingy then throw in the microwave..food..then on my lazy day my husband makes sandwhich..no stress..cheap!

... anyway, my mom was a great cook ... but sadly she's gone ... we never had that much interest to learn her "secret" recipes ... but now we realize we should have ... doh!!! ... thankfully, I did learn a couple of my favorites ...
... btw, are you the cook of the family??? ... does wifey cook??? ... who's the better chef??? ... growing up, hands down, my mom was the better overall cook ... she could cook anything and everything ... but for the few things that my dad could cook ... I have to admit, his version was better ... that was for only maybe 3 or 4 dishes ... he didn't cook that often ...
... sorry, I don't cook that often, either ... and the recipes I know are buried somewhere at home ...

OUT AND ABOUT
.......oh okay I got one cheap recipe...I teach my kids to eat all sorts of vegetables ...then I make the simple food..I send my oldest to grocery buy bulk skinless chicken ...then I separate the chicken in zilpoc I use only three skinless chicken..I brown the chicken no oil nothing simple then add seasoning salt ..... after it turns brown I add water..let it boil ..then add spinach cook in seconds...SERVE RICE ON THE SIDE ...food in ten minutes ....I train my kids to eat simple food so I don't get stress.....with skinless chicken I can make it last for weeks...funny.

i don't have any secret recipes but i do have this basic one...
teriyaki marinade:
1 cup shoyu (I use a little less if it's Kikkoman, more if it's Aloha)
1 cup sugar
1/2 cup water
2 cloves (or more) garlic, minced
1 inch piece ginger, minced
mix ingredients together until sugar is dissolved. use as marinade for chicken or beef or almost anything else (even hamburger for teriburgers - just don't add too much so it doesn't get too wet!). can also add sesame seed oil, sesame seeds, green onions, chili pepper flakes for korean style sauce.

I remember my oldest brother cooks gourment food when we visit..HE MAKES ME LOOK STUPID...my husband would say oh this is good food...so I said to my husband just wait until he has kids he will be reduce to cooking hotdog..so sure enough last timeI visit..HOTDOG..his kids like hotdog
see I am smart I teach my kids to eat vegetables then I cook easy simple food.....I RELAX NO STRESS looking for ingredience! my oldest brother he has his seasoning all in alphabetical order..OMG I only have one seasoning salt..so then my rascal youngest brother he goes and mess up my oldest brother seasoning he rearrange the seasoning in his drawer my oldest goes crazy he has to have it all in order he blame his wife hisseasoning at not arrange..omg..FUNNY!

Hope you folks love this one: The Grease is trying be epicurean with . . . Italian food. The Sopranos cookbook is a really good source, believe it or not. I have given up many a normal free time activity the Grease normally does in doing Italian foods. Seems I have given my life to this thing.
Yeah, kinda' like La Gourmand Nostra or something, no?
And . . . I am also trying to precise down . . . FILIPINO FOOD!!!!! Barnes and Noble has a good text on recipes and I picked it up.
I have been getting complements on both.
Hey . . . congratulations to our Waipio Little Leaguers. They worked really hard. Really nothing to be ashamed of . . . they won the U.S. title and made history with the uku million games they played near the end, yeah? Our boys from Waipio have shown us true endurance in athleticism, indeed.

My mom was the same way. She also was a great cook, but didn't have any written recipes. All her recipes were in her head. Unfortunately she is no longer with us, so some of my favorite dishes are gone. I try to re-create them, but it is not the same. Even simple stuff like beef stew just doesn't taste the same.
I do something similar to your miso marinade, but I use it on pork butt and put it in the crock pot. Winnahs!

Rosette - actually I heard that tomatoes in a grilled cheese sandwich is really good. Never tried it myself, sounds kinda funky to me.

Clam Rice
1 can seasoned clams(dunno the brand name, but the can is blue and red)
2 cups rice
2 cups chicken broth
2 Tbs shoyu
put it all in the rice cooker and cook it.
Good stuff.
Sometimes I add more to it. Shitake mushrooms, chopped onions, whatever I am in the mood for. Great one pot meal.

Peanut Butter/Pancake syrup
All to your own taste.
mix the peanut butter and pancake syrup. Spread it on bread or toast. mmmm ono.
I did a demonstration speech in school using this. Everyone kinda had that look on their face, wth. But when I gave out samples, people were wanting more.

1 Bag chicken (drumettes/wings)
1 jar of your favorite kim chee (more if you want)
Brown chicken. Add kim chee. Simmer for 30-40 minutes. Super ono next day!
You can also replace kim chee with your favorite spaghetti sauce.

Yes, yes, right on tita leerz . . . I am most intrigued with the salt items and vinegarinesses that go into Filipino foods. I have not really tried too much lumpia dishes (savve for a dessert-style lumpia . . . that one I'll keep a secret for a while as it drew raves [sorry, no mean for brag here] whilst keeping a decidedly Filipino feel to it). But, yeah, the pork and peas stuff, man, peoples go for that, and easy to make.

Snow how about sharing your cornstarch chicken recipe? I have never been able to figure it out. I usually don't use recipes, I just throw stuff together. Here is my apple crisp recipe.
Throw can apples into a pan
sprinkle sugar and cinnamon over the apples
sprinkle a box of yellow cake mix over the apples
pour 1 or 2 blocks (depending on how rich you want it) of melted butter over the cakemix
Bake for about an hour

my best secret recipe making food from left overs....if I have left over spaghettin it turns into soup ..magic!.....omg....so I open my fridge I turn left over into SOMETHING..one time I have rice and potatoes..so I mix the two and I was craving for mexican food so I add taco seasoning...kind of funny my kids will eat anything!
so my secret do i get points for being cheap lazy cook!

yes it is great cooking left overs ...mix and match I come up with things to eat......yesterday I was cooking spaghetti...I added mushroom soup ....so if my kids are tired of spaghetti..I will turn the sauce to chilli the next day...omg funny ! then with left oer spaghetti noodle I mix with chicken and spinach soup...VOILA food..yes lazy cook!

to make marinated fried chicken:
marinate boneless chicken thighs overnight in teriyaki marinade (using that recipe i posted earlier). dip chicken in beaten egg (try to let as much of the marinade drip off first), then coat with a mixture of half cornstarch and half flour. deep fry until golden brown and chicken is cooked (make sure your heat is not too high, otherwise it will be browned on the outside and raw on the inside).

oh I got an idea you have to make friend with my friend who wont eat meat....I have to be creative with her food..or try cooking with my sister in laws kids full of food allergies..so I told my sister in law to keep her food simple...her daugter cannot eat fish or oils or milk products etc etc.....with my food cooking skills I can feed a diabetic and kids full or allergies.

Ed- regarding the PB/Syrup. In a small bowl you will mix it to incorporate the syrup into the peanut butter. Mix too much and it gets too thick.
My Dad used to do this with molasses, but that is too much for me.

yes my friend I told her seeing she has to watch her food she cannot eat flour..etc etc..so I told her she can cook her egg in microwave...SHE PUT THE WHOLE EGG inside the microwave..it exploded..OMG I figure she can scramble the egg not stick whole egg in microwave! Even my boys know how to cook scrambled egg in microwave..

okay fine I can give you my recipe fried rice...THE fastest way to cook..I put left over lobster left over bar b cue chicken ..then add left over steak and left over roast beef ....I rummage for left over ham .. I use a big square pan ...then add rice in the pan I use oven to cook..add seasoning drizzle with green onions after..voila....FOOD! the next day I add taco seasoning OKAY EAT THAT no complaining kids or else!

after two kids and I am not stuck with the little tykes I prefer to go out to eat ..just me and my husbnad enjoying NO PESKY KIDS! then after I go home and cook whatever I had in restaurant voila...but usually my food tastes better..omg funny.
